  • 1 pound boneless, skinless chicken thighs
  • 1 teaspoon salt, divided
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon light or dark brown sugar
  • 2 cups apple slices
  • 1/3 cup chopped shallots
  • 1/3 cup apple cider

Instructions

  1. Heat a large skillet over medium heat.
  2. Season chicken thighs with salt and spices.
  3. Add oil to the skillet, cook chicken for about 10 minutes until golden brown and cooked through; remove from pan.
  4. In the same skillet, melt butter and stir in brown sugar, apple slices, shallots, and remaining salt; cook until apples soften.
  5. Pour in apple cider and simmer until thickened.
  6. Return chicken to the skillet; coat with sauce for a couple of minutes before serving.
