- 1 pound boneless, skinless chicken thighs
- 1 teaspoon salt, divided
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon dried thyme leaves
- 1/4 teaspoon ground black pepper
- 2 tablespoons unsalted butter
- 1 tablespoon light or dark brown sugar
- 2 cups apple slices
- 1/3 cup chopped shallots
- 1/3 cup apple cider
- Heat a large skillet over medium heat.
- Season chicken thighs with salt and spices.
- Add oil to the skillet, cook chicken for about 10 minutes until golden brown and cooked through; remove from pan.
- In the same skillet, melt butter and stir in brown sugar, apple slices, shallots, and remaining salt; cook until apples soften.
- Pour in apple cider and simmer until thickened.
- Return chicken to the skillet; coat with sauce for a couple of minutes before serving.
