  • 3 tablespoons avocado oil
  • 1 tablespoon all-purpose seasoning salt
  • 1 teaspoon dried parsley
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1 tablespoon prepared mustard
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • sliced dill pickles
  • pickled red onions
  • sliced raw jalapeños
  • snipped chives or sliced green onions

Instructions

  1. Preheat oven to 425°F (220°C). Dice sweet potatoes and toss with avocado oil, seasoning salt, parsley, and black pepper. Roast for 25-30 minutes until tender.
  2. In a skillet over medium heat, brown the ground beef. Drain excess fat and stir in ketchup, water, sugar, mustard, vinegar, paprika, salt, and pepper. Simmer for 10-15 minutes.
  3. Assemble bowls by placing roasted sweet potatoes at the base and topping them with the sloppy joe mixture. Add desired toppings like pickles and jalapeños.
