  • 2 pounds Welsh lamb (shoulder or neck, cubed)
  • 2 onions (diced)
  • 2 leeks (finely diced)
  • 2 cups lamb or chicken stock
  • 3 large baking potatoes (sliced thinly)
  • 2 carrots (cubed)
  • 2 parsnips (diced)
  • 1 tablespoon tomato paste
  • 1 teaspoon garlic paste
  • Salt and pepper to taste

Instructions

  1. Season the lamb with salt and pepper and brown in a frying pan with vegetable oil over high heat.
  2. In the same pan, sauté onions and leeks in butter until softened.
  3. Stir in plain flour, then gradually add stock, tomato paste, and garlic paste to create a gravy.
  4. Combine the browned lamb with the gravy mixture in a slow cooker along with diced carrots, parsnips, and bay leaves.
  5. Layer sliced potatoes on top, season lightly with salt, pepper, and thyme.
  6. Cover and cook on HIGH for 7–8 hours until everything is tender.
  7. Optional: Broil under the oven grill for 5–7 minutes to crisp the potato topping before serving.
