  • 2 tbsp fresh basil (or 2 tsp dried)

  • 1 tbsp fresh parsley (or 1 tsp dried)

Instructions

  1. Blanch the tomatoes: Bring a pot of water to boil. Drop in tomatoes for one minute, then transfer to ice water to cool.
  2. Prepare tomatoes: Once cooled, peel off the skins and remove seeds.
  3. Combine ingredients: In the slow cooker, mix blanched tomatoes, onion, garlic, basil, oregano, parsley, salt, and pepper.
  4. Cook: Cover the slow cooker and set on low for 10 hours or high for 7 hours.
  5. Blend to desired consistency: After cooking, use an immersion blender for smooth sauce or mash with a potato masher for chunky texture. Adjust seasoning if needed.
