  • 1 cup water
  • 2 cups flax milk (or other plant milk)
  • 4 tablespoons coconut butter
  • 1 cup date sugar
  • 1 cup chocolate chips, melted with 1/4 cup coconut butter
  • 2 tablespoons coconut butter
  • 2 tablespoons cacao powder
  • 1/2 cups peanuts, chopped
  • Pinch salt
  • 2.5 cups organic powdered sugar
  • 1 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened flax milk (or other plant milk)
  • 2 tablespoons maple syrup

Instructions

  1. Proof the yeast by mixing it with warm water for 10 minutes until foamy.
  2. In a bowl, combine cassava flour, date sugar, baking powder, baking soda, psyllium husk, and salt. Add proofed yeast and wet ingredients, mixing until dough forms.
  3. Let the dough rise for 45 minutes under a towel.
  4. Roll out the dough into a rectangle and spread melted chocolate filling evenly over it. Top with chopped peanuts.
  5. Roll tightly into a log and cut into 1-1.5 inch pieces. Place in a baking dish.
  6. Bake at 350°F for 20-25 minutes until set but not browned.
