  • 200 g whole milk
  • 100 g active sourdough starter
  • 70 g cane sugar
  • 1 large egg (room temperature)
  • 430 g bread flour
  • 5 g sea salt
  • 8 tbsp unsalted butter (113 g), room temperature
  • 5 tbsp unsalted butter (for filling)
  • 1/2 cup cane sugar (for filling)
  • 2 tbsp cocoa powder (unsweetened)
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup whole milk (for glaze)
  • 1/4 cup cocoa powder (unsweetened, for glaze)
  • 1 cup powdered sugar (for glaze)
  • 1 tsp vanilla (for glaze)

Instructions

  1. Warm whole milk until body temperature. Combine with active sourdough starter and cane sugar in a mixing bowl. Add egg.
  2. Mix in bread flour and salt until a soft dough forms.
  3. Knead dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise until doubled (4-8 hours).
  4. For filling, cream softened butter with cane sugar and cocoa powder until smooth.
  5. Roll out risen dough into a rectangle, spread filling evenly, sprinkle with chocolate chips, and roll tightly.
  6. Slice into equal pieces and place in a greased baking dish. Allow to rise for another 30-60 minutes.
  7. Preheat oven to 350°F (175°C) and bake rolls for about 30 minutes until golden brown.
  8. For glaze, whisk together milk, cocoa powder, powdered sugar, and vanilla; drizzle over warm rolls.
