  • 2 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cubed

  • 2 tbsp powdered sugar
  • 1 cup fresh raspberries
  • Optional: Egg wash (1 egg + 1 tbsp water)

Instructions

  1. In a large bowl, mix sourdough discard, flour, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Wrap the dough in plastic wrap and chill for about 30 minutes.
  3. Roll out the chilled dough on a floured surface and fold it over several times to build layers.
  4. In another bowl, mix cream cheese and powdered sugar until smooth.
  5. Roll out the dough again and cut into squares. Place cream cheese filling and fresh raspberries on each square.
  6. Fold corners or twist edges to shape danishes and let them proof for 20–30 minutes.
  7. Brush with egg wash if desired, then bake in a preheated oven at 400°F (200°C) for about 18–22 minutes until golden brown.
