  • 4 large organic sweet potatoes
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained
  • 2 cups vegan vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Peel and cube sweet potatoes; boil them in salted water until fork-tender (15-20 minutes). Drain.
  2. In a large bowl, mash sweet potatoes with olive oil, almond milk, vanilla extract, butter, brown sugar, maple syrup, cinnamon, nutmeg, allspice, and soaked raisins until smooth.
  3. Spread the mixture into a greased baking dish. Top with vegan marshmallows and sprinkle raw pecans over.
  4. Bake uncovered for 60-75 minutes until golden brown on top.
