  • 1 small yellow onion (diced)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 1 poblano chili (diced)
  • 34 cloves garlic (minced)
  • 1 cup basmati white rice
  • 2 cups chicken broth
  • 1 cup salsa
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 tsp chili powder
  • 2 cups cooked diced chicken
  • Juice of 1 lime
  • ¼ cup fresh cilantro (chopped)
  • 1 cup yellow corn
  • 1 cup shredded Mexican cheese blend

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion for about 4–5 minutes until translucent.
  2. Add red and yellow bell peppers, poblano chili, and minced garlic; cook until softened.
  3. Stir in basmati rice, coating it with the vegetable mixture. Pour in chicken broth and salsa; mix well.
  4. Add black beans and chili powder; bring to a simmer. Cover tightly and reduce heat to low for about 25 minutes until rice is tender.
  5. Once cooked, fluff the rice mixture with a fork, then fold in cooked chicken, lime juice, chopped cilantro, and corn.
  6. Top with shredded Mexican cheese blend; cover briefly until melted.
  7. Serve warm with optional garnishes like avocado or tortilla strips.
