  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeno (de-seeded)
  • 1/2 TBS cumin
  • 1/2 TBS chili powder
  • 2 cups Monterey jack cheese
  • 1 package egg roll wrappers (20 egg roll wrappers)

Instructions

  1. In a large mixing bowl, combine shredded chicken, corn, black beans, spinach, red bell pepper, jalapeno, cumin, chili powder, and Monterey jack cheese.
  2. Lay an egg roll wrapper on a clean surface with one corner facing you. Place 2-3 tablespoons of filling in the center.
  3. Fold the bottom corner over the filling and tuck in the sides tightly. Roll upwards while sealing the top edge with water.
  4. Arrange rolled egg rolls seam-side down on a baking sheet lined with parchment paper.
  5. Freeze if not cooking immediately; otherwise, preheat oil to 350°F for frying or oven to 400°F for baking.
  6. Fry egg rolls for 3-4 minutes per side or bake for 15-20 minutes until golden brown.
