  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 4 cloves garlic
  • 3 roma tomatoes (finely diced)
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 pinch saffron threads
  • 4 boneless, skinless chicken thighs (cut into pieces)
  • ¼ cup white grape juice
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • ½ lb jumbo shrimp or prawns (about 12 – peeled, tail on)
  • ½ lb mussels (about 10-12, cleaned)
  • 8 oz calamari rings
  • ½ cup frozen peas
  • ¼ cup fresh parsley (for garnish)
  • Lemons (for garnish)

Instructions

  1. In a skillet over medium heat, sauté olive oil, onion, bell pepper, and garlic until the onion is translucent. Add chopped tomatoes, bay leaf, paprika, saffron, salt, and pepper; cook for 5 minutes before adding white grape juice. Simmer for another 10 minutes.
  2. Stir in chicken pieces and rice; cook for 1 minute to infuse flavors.
  3. Slowly pour chicken broth around the pan; do not stir. Bring to a boil then reduce heat to medium-low.
  4. Cook uncovered for 15-18 minutes until most liquid is absorbed.
  5. Add shrimp, mussels, calamari rings, and peas; cook for an additional 5 minutes without stirring.
  6. Remove from heat, cover with a lid or foil, and let rest for 10 minutes before serving.
  7. Garnish with parsley and lemon slices before serving hot.
