  • 9 ounces Spanish chicken sausage (spicy or mild, sliced)
  • 1 green bell pepper (deseeded and chopped)
  • 1 yellow onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 carrot (peeled and chopped)
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • ¼ tsp cayenne pepper
  • 2 tbsp double concentrated tomato paste
  • 2 tbsp flour
  • 1.7 pounds waxy potatoes (peeled and cut into bite-sized pieces)
  • 6 cups chicken broth
  • ¾ cup heavy cream
  • 2 tbsp chopped parsley

Instructions

  1. Start by prepping all your ingredients: peel and chop the potatoes, bell pepper, carrot, onion, and garlic.
  2. In a large pot, heat olive oil over medium-high heat. Add sliced chicken sausage and brown for about 3 minutes.
  3. Stir in the bell pepper; cook for 2 minutes. Add onion and garlic; sauté for another 2 minutes.
  4. Mix in the carrot along with seasonings (salt, black pepper, cumin, oregano, paprika, cayenne pepper) and cook briefly.
  5. Stir in tomato paste and flour until combined. Add potatoes and chicken broth; bring to a boil then reduce heat to simmer for 15 minutes until potatoes are tender.
  6. Finally, stir in heavy cream and chopped parsley; simmer for an additional 3 minutes before serving.
