  • 425 g all-purpose flour
  • 170 g bittersweet chocolate chips
  • 24 g flour (for tangzhong)
  • 60 mL honey
  • 4575 mL water (for cross paste)
  • 62 g all-purpose flour (for cross paste)
  • 34 cardamom pods

Instructions

  1. Begin by creating tangzhong: whisk together 120 mL milk and 24 g flour in a saucepan over medium heat until thickened.
  2. Activate the yeast by mixing warm milk and yeast, letting it sit until foamy.
  3. In a mixing bowl, combine tangzhong, activated yeast mixture, melted butter, eggs, sugar, vanilla, and spices; mix well.
  4. Gradually add flour until incorporated; knead on a floured surface for about 8 minutes until elastic.
  5. Place in a greased bowl and cover; let rise for 1 to 1.5 hours until doubled.
  6. Punch down dough, shape into buns, place on a lined tray, cover, and let rise for another 30-45 minutes.
  7. Preheat oven to 375°F (190°C), brush tops with egg wash or milk.
  8. Bake for 25-30 minutes or until golden brown; cool slightly before glazing with honey mixed with water.
