  • 3/4 cup dry quinoa (or white rice)
  • 1/2 head cauliflower, chopped into florets
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1 medium red onion, cut into thick strips
  • Olive oil
  • Fresh mint and cilantro leaves
  • Spices: cumin seeds, garlic powder, cayenne pepper, cinnamon, turmeric
  • 3 tbsp lemon juice
  • 1 tsp honey or maple syrup

Instructions

  1. Cook quinoa or rice according to package instructions; set aside.
  2. Preheat oven to 425°F (220°C). Spread cauliflower, chickpeas, and red onion on a baking tray; drizzle with olive oil and salt. Roast for 25-30 minutes until golden brown.
  3. In a pot, heat olive oil with cumin seeds and spices for the tadka dressing. Swirl in lemon juice and honey.
  4. Combine cooked quinoa/rice with roasted vegetables and fresh herbs in a bowl.
  5. Pour the dressing over the salad; toss gently to combine.
