  • 1.5 cups sushi rice
  • 2 cups water
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon sesame oil
  • 1 pound ahi tuna (finely chopped)
  • 3 tablespoons Japanese kewpie mayonnaise
  • 2 tablespoons Sriracha
  • 1 tablespoon soy sauce
  • 12 teaspoons lime juice
  • Avocado slices
  • Toasted sesame seeds
  • Chives or scallions (minced)
  • Jalapeño or serrano pepper (sliced)

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water and salt in a pot, bring to boil, cover, and steam on low for 15 minutes.
  2. Allow rice to cool slightly, then mix in rice vinegar, sugar, and sesame oil until well combined.
  3. Shape cooled rice into rectangles (2×3 inches) and place on a parchment-lined baking sheet.
  4. Fry each piece in heated oil over medium-high heat until golden brown, about 2-3 minutes per side.
  5. In a bowl, mix chopped ahi tuna with kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice.
  6. Top each crispy rice piece with avocado slices, spicy tuna mixture, toasted sesame seeds, chives or scallions, and jalapeños.
