  • ½ cup mozzarella cheese (shredded)
  • ⅓ cup parmesan cheese (grated)
  • ½ cup frozen spinach (thawed and drained)
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon red pepper flakes
  • 4 salmon fillets (6 ounces each, skin on)
  • 3 tablespoons olive oil (divided)
  • Salt and pepper to taste
  • Juice of ½ lemon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine softened cream cheese, thawed spinach, shredded mozzarella, grated parmesan, garlic powder, and red pepper flakes until well blended.
  3. Season salmon fillets with olive oil, salt, and pepper on both sides. Place them skin-side down on a lined baking sheet.
  4. Create pockets in the salmon by gently pressing down the center. Stuff each pocket generously with the spinach filling.
  5. Bake for about 12 minutes or until the salmon flakes easily with a fork.
