  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked quinoa or brown rice
  • 1 small red onion, diced
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Marinate the flank steak with olive oil, cumin, chili powder, salt, and pepper for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat.
  3. Cook the marinated steak for about 4-5 minutes on each side until medium-rare; let it rest afterward.
  4. Cook corn as desired—grill fresh corn or sauté frozen corn until heated through.
  5. Prepare vegetables: halve cherry tomatoes and dice red onion.
  6. Slice avocados and drizzle with lime juice to keep them fresh.
  7. In serving bowls, layer cooked quinoa or brown rice first followed by sliced steak, corn, tomatoes, onion, and avocado.
  8. Finish with a squeeze of lime juice and garnish with cilantro.
