  • 1/3 cup olive oil
  • 1/3 cup soy sauce
  • 1/3 cup apple vinegar
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons Italian seasoning
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/3 cup chopped onion
  • 1/3 cup fine dry bread crumbs
  • 2 cups fresh baby spinach leaves
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes, drained

Instructions

  1. Prepare the marinade by whisking olive oil, soy sauce, apple vinegar, Dijon mustard, lemon juice, minced garlic, Italian seasoning, and black pepper.
  2. Make shallow cuts on the flank steak's surface. Marinate the steak in a resealable bag for at least 8 hours or overnight.
  3. Preheat your oven to 350°F.
  4. Pat the steak dry and spread garlic paste over it.
  5. Layer chopped onion, bread crumbs, spinach, cheeses, and sun-dried tomatoes on top.
  6. Roll tightly from one end and secure with kitchen twine or toothpicks.
  7. Bake seam-side down for about 60 minutes until cooked through (145°F).
  8. Rest for 5-10 minutes before slicing and serving.
