  • 200g all-purpose flour
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100g light brown sugar
  • 100g unsalted butter, melted
  • 150ml milk
  • 1 large egg
  • 100g dark treacle or molasses
  • 2 ripe pears, peeled and diced
  • 100g golden syrup
  • 50g unsalted butter
  • 50g light brown sugar

Instructions

  1. Preheat your oven to 170°C (340°F) and prepare your cake tin with parchment paper.
  2. In a bowl, sift together the flour, ground ginger, cinnamon, baking soda, and salt; set aside.
  3. In another bowl, whisk melted butter, light brown sugar, milk, egg, and dark treacle until smooth.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Fold in diced pears gently.
  6. Pour batter into the prepared tin and bake for 35–40 minutes until a skewer comes out clean.
  7. For the glaze, heat golden syrup, butter, and brown sugar in a saucepan until smooth.
  8. Poke holes in the warm cake and drizzle with glaze; let cool slightly before serving.
