  • 1 egg + 1 tbsp water (for egg wash)
  • 12 cups heavy/double cream
  • 35 tbsp sugar
  • 1 cup fresh strawberries, sliced
  • Icing sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Roll out the puff pastry and cut it into equal-sized squares.
  3. Fold each square diagonally into triangles and place them on the prepared tray.
  4. Whisk together the egg and water; brush over the tops of the triangles.
  5. Bake for about 20 minutes until golden brown. Keep an eye on them!
  6. While baking, whip heavy cream with sugar until stiff peaks form.
  7. Slice strawberries and set aside.
