Ingredients

Scale
  • 10 oz baby spinach (fresh)
  • 3 cups strawberries (cleaned, hulled, and sliced)
  • 1 cup blueberries
  • 1/3 cup crumbled feta cheese
  • 1 cup toasted pecans (some chopped)
  • 1 cup balsamic vinegar
  • 1/4 cup honey or brown sugar

Instructions

  1. Create the Balsamic Glaze: Pour balsamic vinegar into a saucepan over medium heat. Simmer gently for 10-15 minutes until reduced by half and thickened to coat the back of a spoon. Stir in honey or brown sugar until dissolved, then set aside to cool.
  2. Prepare the Greens: Wash baby spinach under cold water, pat dry, and place in a large mixing bowl.
  3. Slice Strawberries: Cut hulled strawberries into thin rounds or quarters, then add to the bowl.
  4. Combine Ingredients: Add blueberries, crumbled feta cheese, and toasted pecans to the bowl with the spinach and strawberries.
  5. Dress the Salad: Drizzle the cooled balsamic glaze over the salad. Toss gently until everything is evenly coated.
