  • 1 tbsp sun-dried tomato oil
  • 2 lbs boneless chicken thighs
  • 1 ½ tbsp Italian seasoning
  • 4 garlic cloves (minced)
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes (chopped)
  • ¼ cup heavy cream
  • ¼ cup freshly grated parmesan cheese

Instructions

  1. Heat sun-dried tomato oil in a large skillet over medium heat. Season chicken thighs with Italian seasoning, salt, and pepper. Sear chicken for 6-7 minutes until golden brown; flip and cook for another 5-7 minutes until fully cooked. Remove from skillet.
  2. In the same skillet, sauté minced garlic until fragrant. Pour in chicken broth and scrape up brown bits from the pan.
  3. Stir in chopped sun-dried tomatoes, heavy cream, and parmesan cheese; whisk until smooth.
  4. Return chicken to skillet and coat with sauce. Garnish with fresh basil before serving.
