  • 6 bell peppers
  • 1 onion, diced
  • 1 lb lean ground beef
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 2 cups cooked brown rice
  • 1½ cups shredded cheddar jack cheese
  • 1 taco seasoning packet
  • 2 tsp garlic powder
  • 1 tsp chili powder
  • Salt and black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Halve the bell peppers and remove seeds. Pre-bake for 5 minutes.
  2. In a large pan over medium heat, sauté diced onion in olive oil with garlic powder, chili powder, salt, and pepper until soft.
  3. Add ground beef and cook until browned.
  4. Mix in diced tomatoes, black beans, corn, cooked brown rice, and taco seasoning; adjust seasonings to taste.
  5. Fill each pepper generously with the mixture. If any filling remains, use it in another dish.
  6. Cover with foil and bake for 10 minutes; then add cheese on top and bake uncovered for an additional 15 minutes until bubbly.
