  • 2 pounds stew meat (chuck meat)
  • 2 tablespoons flour
  • 1 large onion
  • 4 to 5 carrots
  • 3 cups golden potatoes
  • 1 teaspoon fresh rosemary
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 4 cloves garlic
  • 2 teaspoons tomato paste
  • 2 quarts beef stock
  • 2 sprigs fresh thyme
  • 1 cup flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt (for dumplings)
  • 1 tablespoon butter (room temperature)
  • 1/3 to 1/2 cup milk

Instructions

  1. Cut the stew meat into bite-sized pieces and toss with flour, salt, and pepper.
  2. In a large pot, brown the seasoned meat in batches over medium-high heat. Remove from pot.
  3. In the same pot, sauté chopped onion, garlic, carrots, and potatoes for about 5 minutes.
  4. Return the browned beef along with tomato paste, herbs, seasonings, and beef stock. Simmer gently for two hours.
  5. For dumplings, mix flour, baking powder, sea salt, butter, and milk until just combined.
  6. Drop spoonfuls of dumpling batter onto the stew and cover for 15 minutes until fluffy.
  7. Serve garnished with fresh herbs.
