  • 2 Tablespoons Olive Oil, divided
  • 12 oz Broccoli Florets
  • 1 pound Ground Beef
  • 1" piece Ginger, minced (optional)
  • 2 cloves Garlic, minced (optional)
  • 1 cup Teriyaki Sauce
  • 1/4 cup Light Mayo
  • 1 1/2 Tablespoon Sriracha or Chili Garlic Sauce
  • 1 Tablespoon Honey
  • 1 Tablespoon Rice Vinegar
  • 1/2 teaspoon Garlic Powder
  • Rice or Cauliflower Rice for serving
  • Toasted Sesame Seeds for garnish
  • Scallions, thinly sliced for garnish

Instructions

  1. Whisk together teriyaki sauce ingredients in a bowl.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Roast broccoli florets for 2-3 minutes without stirring until slightly charred. Flip and cook for another 2 minutes before removing them from the skillet.
  3. Add remaining olive oil to the skillet, then brown one side of the ground beef. Once browned, break it apart to fully cook.
  4. If using ginger and garlic, add them to the center of the skillet and sauté until fragrant.
  5. Pour in the teriyaki sauce and simmer for 1-2 minutes until thickened. Fold in roasted broccoli.
  6. Serve over rice or cauliflower rice, garnished with toasted sesame seeds and sliced scallions.
