  • 2 carrots, cut into bite-size pieces
  • 2 medium potatoes, cut into bite-size pieces
  • 1/2 yellow onion, diced
  • 2 chicken breasts, cubed
  • 2 Tbsp. olive oil
  • 2 tsp. ground ginger
  • 2 tsp. minced garlic
  • 1 jar red curry paste (4 oz.)
  • 2 cans coconut milk
  • 1/4 cup + 2 Tbsp. peanut butter
  • 5 Tbsp. brown sugar
  • 4 tsp. soy sauce
  • Juice from 1 lime

Instructions

  1. Sauté onions, carrots, and potatoes in olive oil over medium-high heat for about 4-5 minutes until softened.
  2. Add cubed chicken along with ginger and garlic; stir in red curry paste and sauté for another couple of minutes.
  3. Pour in coconut milk and simmer on medium-low heat for about 10 minutes until vegetables are tender.
  4. Stir in peanut butter, brown sugar, soy sauce, and lime juice; cook for an additional 4-5 minutes until heated through.
  5. Serve over steamed rice and garnish with chopped peanuts.
