  • 500 g butternut squash (peeled and chopped)
  • 4 cloves garlic (peeled)
  • 1 yellow onion (finely sliced)
  • 500 g shelf-stable gnocchi
  • 50 g turkey strips (chopped)
  • 1 ball of fresh mozzarella (torn into pieces)
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 75 ml milk

Instructions

  1. Preheat the oven to 180ºC (350ºF).
  2. Place butternut squash, garlic, and onion on a baking tray. Drizzle with olive oil and roast for about 30 minutes until tender.
  3. Transfer roasted vegetables to a blender; purée until smooth.
  4. In a frying pan, heat a teaspoon of olive oil and cook turkey strips until crispy.
  5. Combine butternut purée with water and milk in the pan; stir in gnocchi and simmer for 8-10 minutes.
  6. Add lemon juice and half of the crispy turkey strips; mix well.
  7. Top with torn mozzarella and grill for about five minutes until bubbly.
  8. Garnish with remaining turkey strips, cracked black pepper, walnuts, and parsley before serving hot.
