  • 190g Graham crackers
  • 3 tbsp granulated sugar
  • 5 tbsp melted unsalted butter
  • 32 oz full-fat cream cheese
  • 1 1/2 cups granulated sugar
  • 1/2 tsp salt
  • 1 tsp vanilla bean paste
  • 4 large eggs
  • 1/2 cup full-fat heavy cream
  • 1 cup full-fat sour cream
  • 23 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C). In a bowl, combine crushed graham crackers, sugar, and melted butter; press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually mix in sugar and salt until fluffy. Add eggs one at a time, then vanilla bean paste.
  3. Stir in heavy cream, sour cream, and lemon juice until smooth. Pour filling over crust.
  4. Bake for about 1 hour and 15 minutes until set but slightly jiggly in the center. Cool before chilling in the fridge for at least four hours.
