  • 2 pounds minced beef
  • 24 ounces tomato-based pasta sauce
  • 15 ounces ricotta cheese
  • 1 cup shredded parmesan reggiano
  • 1.5 cups mozzarella cheese
  • 1 egg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips; lightly salt and let sit for 15 minutes to draw out moisture.
  3. In a skillet over medium heat, brown minced beef until fully cooked.
  4. In a bowl, mix ricotta cheese, egg, salt, pepper, and half the parmesan until smooth.
  5. In a baking dish, layer tomato sauce, zucchini slices, half the beef mixture, half the ricotta mixture; repeat layers and top with mozzarella and remaining parmesan.
