  • 1.5 cups all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 cup soda water
  • ½ cup buttermilk
  • 1 egg
  • Seasonings: salt, garlic powder, onion powder, sweet paprika, black pepper
  • Vegetable oil for frying
  • Fresh parsley for garnish

Instructions

  1. Clean the mushrooms and trim woody ends; cut larger ones into halves or quarters.
  2. In a bowl, combine flour and seasonings. Toss about ¼ of this mixture with the cleaned mushrooms.
  3. In another bowl, whisk together soda water, buttermilk, and egg until smooth. Sift in the remaining flour mixture and stir until combined.
  4. Set up a breading station with panko breadcrumbs next to the batter and floured mushrooms.
  5. Heat oil in a saucepan to 350°F (175°C). Dip each mushroom in batter then roll in panko breadcrumbs.
  6. Fry in small batches for 3-5 minutes until golden brown; drain on paper towels.
  7. Serve immediately garnished with fresh parsley.
