  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon cooled espresso or strong coffee

  • 1/2 cup ladyfinger crumbs (or graham crackers)
  • 8 oz semi-sweet or dark chocolate (for coating)
  • 2 oz white chocolate (optional drizzle)

Instructions

  1. In a bowl, mix mascarpone cheese, powdered sugar, vanilla extract, espresso, and cocoa powder until smooth.
  2. Stir in ladyfinger crumbs and refrigerate the mixture for one hour to firm up.
  3. Scoop chilled mixture into 1-inch balls and place on a parchment-lined tray. Freeze for 15–20 minutes.
  4. Melt semi-sweet or dark chocolate until smooth.
  5. Dip each truffle into melted chocolate, tapping off excess before placing back on the tray.
  6. Optional: Drizzle melted white chocolate over truffles and sprinkle with mini chocolate chips.
  7. Dust with additional cocoa powder before chilling until firm.
