  • 2 brown onions (sliced)
  • 1 heaped tbsp plain flour
  • 480 ml chicken or vegetable stock
  • 2 bay leaves

  • 1/4 tsp dried thyme

Instructions

  1. Preheat your oven to 170°C (325°F).
  2. In a medium-sized casserole, melt butter and avocado oil over medium heat. Brown the lamb pieces for about 3–4 minutes, then remove them and set aside.

  4. Sprinkle flour over the mixture and stir well before adding hot stock, bay leaves, salt, pepper, and Worcestershire sauce. Bring to a gentle bubble.
  5. Cover the casserole with a lid or foil and bake for one hour.
  6. After an hour, stir in carrot chunks and layer sliced potatoes on top. Brush with melted butter and sprinkle with thyme.
  7. Increase oven temperature to 200°C (400°F) and bake uncovered for another 30 minutes until potatoes are golden brown.
