  • 24 turkey meatballs
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 23 celery stalks, diced
  • 2 large garlic cloves, minced
  • 1 tablespoon Italian seasoning mix
  • 1/4 teaspoon red chili flakes
  • 2 tablespoons tomato paste
  • 1.5 cups tomato sauce (passata)
  • 5 cups chicken stock
  • 3/4 cup orzo pasta
  • 2 cups baby spinach
  • 1/2 cup half and half (single cream)
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the onion, carrot, and celery for about 7-8 minutes until softened.
  2. Add minced garlic, Italian seasoning mix, and red chili flakes; cook for another minute until fragrant.
  3. Stir in tomato paste and tomato sauce (passata), then add chicken stock and orzo. Bring to a boil.
  4. Reduce heat and let it simmer for about 10 minutes, stirring occasionally.
  5. Once the orzo is al dente, add turkey meatballs and baby spinach, cover the pot to let them warm through for another 1-2 minutes.
  6. Stir in half and half and grated Parmesan cheese; season with salt and pepper before serving hot.
