  • 1 jar (12 ounces) marinated artichoke hearts
  • 1 can (15 ounces) cooked chickpeas
  • 1/4 cup olive oil
  • 2 tablespoons apple vinegar
  • 1 teaspoon dried parsley
  • 1/41/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper

Instructions

  1. Prep all vegetables by halving cherry tomatoes, thinly slicing red onion, finely dicing chives, and cutting basil into strips. Strain the artichokes and rinse the chickpeas.
