  • 2 Tbsps unsalted butter
  • 4 garlic cloves, minced
  • 1/2 cup organic sundried tomatoes
  • 1 Tbsp organic tomato paste
  • 2 Tbsps Tuscan Marry Me blend
  • 1 tsp sea salt
  • 1 cup organic heavy cream
  • 1/2 cup organic vegetable stock
  • 3 Tbsps white cooking apple vinegar
  • 1/2 lemon, freshly-squeezed
  • 1 cup chopped kale, organic
  • 1/2 cup freshly-grated parmesan + more for garnish

Instructions

  1. In a large skillet over medium heat, melt the unsalted butter and sauté the minced garlic until fragrant.
  2. Add the butter beans, sundried tomatoes, tomato paste, Tuscan Marry Me blend, and sea salt. Stir to combine.
  3. Pour in the heavy cream and vegetable stock; mix gently until well combined.
  4. Stir in apple vinegar and freshly squeezed lemon juice; let simmer on low heat for about 5 minutes.
  5. Add chopped kale and freshly grated parmesan cheese; stir until the kale wilts slightly.
