  • 1/2 cup kalamata olives (chopped)
  • 1/2 cup fresh parsley (chopped)
  • 1.5 cups plain unsweetened Greek yogurt
  • 1/2 cup apple cider vinegar
  • Juice of 1/2 lemon
  • 2 cloves garlic (minced)
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh chopped dill

Instructions

  1. Cook the rotini pasta according to package instructions in salted boiling water until al dente. Drain and let cool.
  2. While the pasta cooks, chop the cucumber, carrot, onion, bell pepper, olives, and parsley.
  3. In a mason jar or bowl, combine Greek yogurt, apple cider vinegar, lemon juice, garlic, onion powder, oregano, and dill; shake or whisk until smooth.
  4. In a large mixing bowl, combine the cooled pasta with chopped vegetables and olives. Pour the tzatziki dressing over the mixture and gently fold until everything is well-coated.
