  • 1 (14 oz) package extra-firm tofu (water-packed)
  • 1/2 cup refined coconut oil (melted)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon nutritional yeast
  • 1 teaspoon salt

Instructions

  1. Press the tofu by wrapping it in clean kitchen towels and placing a weight on top for 15-30 minutes to remove excess moisture.
  2. In a food processor, combine the pressed tofu, melted coconut oil, apple cider vinegar, nutritional yeast, and salt. Blend on high speed for about one minute until smooth.
  3. Scrape down the sides and blend again until creamy and free of lumps. If needed, add a teaspoon of water for desired consistency.
  4. Taste and adjust flavors if desired, then transfer to an airtight container and chill in the refrigerator for at least 30 minutes before serving.
