Ingredients

  • 1 1/2 cups brown lentils
  • 1 large white onion
  • 2 cloves garlic
  • 1 jalapeño
  • 2 cans fire-roasted tomatoes with green chilies
  • 4 cups vegetable broth
  • Corn or flour tortillas
  • 1/4 cup lime juice

Instructions

  1. Cook brown lentils in vegetable broth until tender, about 20 minutes.
  2. Sauté diced onion, garlic, and jalapeño in a non-stick pan until fragrant.
  3. Combine cooked lentils with sautéed vegetables and tomatoes in a bowl. Stir in taco seasoning and lime juice.
  4. Spoon filling onto tortillas, roll tightly, and place seam-side down on a baking sheet.
  5. Bake at 400°F for 10-15 minutes until golden brown or air fry at 375°F for 8-10 minutes.
