  • 1 large sweet potato (12 ounces), diced
  • 1 lb flat iron steak, diced
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 4 green onions, sliced
  • 2 tbsp coconut aminos
  • Sea salt and black pepper to taste

Instructions

  1. Microwave diced sweet potatoes for 4–6 minutes until slightly tender.
  2. Heat 2 tbsp olive oil in a skillet over high heat; add steak and cook for about 10 minutes until browned. Set aside.
  3. In the same skillet, add remaining olive oil and sauté sweet potatoes for 3–4 minutes until golden.
  4. Create a well in the center of the skillet; add minced garlic and sauté for about a minute.
  5. Stir in bell peppers and green onions; cook for another 3–4 minutes until tender.
  6. Return steak to the skillet, add coconut aminos, salt, and pepper; mix well and heat through for 1–2 minutes.
  7. Serve hot, garnished with fresh cilantro if desired.
