  • 4 cups shredded zucchini
  • 1 pound ground beef
  • 2 large eggs
  • 2 cups pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine shredded zucchini with salt and let it sit for 10 minutes. Squeeze out excess moisture.
  3. Mix drained zucchini with eggs, Parmesan cheese, and half of the mozzarella.
  4. Press the mixture into a greased baking dish and bake for 20 minutes until lightly browned.
  5. Meanwhile, brown ground beef with chopped onion in a skillet. Drain fat and stir in pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper; cook for 5 minutes.
  6. Spread the beef mixture over the crust and top with remaining mozzarella cheese. Bake again for another 20 minutes until bubbly.
  7. Allow cooling for a few minutes before slicing and serving.
