  • ¾ cup unsalted butter (room temperature)
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 large eggs
  • 2 cups heavy cream
  • 3 tablespoons granulated sugar
  • ¼ teaspoon kosher salt
  • 2 teaspoons all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon ground nutmeg
  • ¾ cup (150 g) granulated sugar (for batter)
  • ½ cup (122.5 g) whole milk
  • 2 ounces cream cheese (softened)
  • ½ cup (100 g) granulated sugar (for cream cheese mixture)
  • ½ teaspoon vanilla extract
  • 1 pinch kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a cupcake tin with paper liners.
  2. In a saucepan, melt 2 tablespoons of butter over medium heat and add the apples, sugar, lemon juice, cinnamon, and salt. Cook until softened (about 5 minutes), then sprinkle in flour and stir until thickened.
  3. In a large bowl, mix flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  4. In another bowl, beat the remaining butter and sugar until creamy. Add eggs one at a time followed by vanilla extract.
  5. Gradually mix in dry ingredients with milk until just combined. Fold in the apple mixture.
  6. Fill cupcake liners about two-thirds full and bake for 20-25 minutes until a toothpick comes out clean.
  7. For the topping, beat heavy cream with sugar and vanilla until soft peaks form; frost cooled cupcakes.
