  • 1 red bell pepper, thinly sliced

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame seeds

Instructions

  1. In a large mixing bowl, combine the cucumbers, chickpeas, carrots, red bell pepper, cilantro, and green onions.
