  • 34 lbs organic chicken, skin removed (drumsticks and thighs recommended)
  • 2 tablespoons Jamaican curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup organic chicken stock (low-sodium)
  • 2 medium russet potatoes, peeled and cubed
  • 2 medium carrots, peeled and chopped
  • 1 medium bell pepper, cored and chopped
  • 4 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1–3 scotch bonnet peppers (to taste)
  • Salt and pepper to taste

Instructions

  1. Marinate chicken in Jamaican green seasoning and browning sauce for at least 30 minutes.
  2. Heat olive oil in a heavy-bottomed pot over medium-high heat. Sear marinated chicken until golden brown on both sides. Remove from pot.
  3. In the same pot, sauté onions, garlic, ginger, potatoes, carrots, and bell pepper for about 5 minutes.
  4. Return chicken to the pot; add coconut milk and chicken stock. Stir in additional spices and seasonings.
  5. Bring to a gentle simmer and cover partially; cook for about 25-30 minutes until chicken is tender.
  6. Garnish with chopped green onions before serving.
