  • ¾ cup Whole Milk Ricotta
  • 1 cup Italian Breadcrumbs
  • ¼ cup Fresh Parsley
  • 2 cloves Garlic
  • 1 medium Onion
  • 5 ounces Baby Spinach
  • 1½ cups Heavy Cream
  • ½ cup Freshly Grated Parmesan Cheese
  • 4 tablespoons Butter
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine soaked breadcrumbs and milk.
  3. Add ground chicken, ricotta, chopped onion, minced garlic, parsley, sun-dried tomatoes, egg, Parmesan cheese, Italian seasoning, salt, and pepper. Mix gently until combined.
  4. Roll the mixture into approximately 24 meatballs and place on a parchment-lined baking sheet.
  5. Bake for about 25 minutes or until golden brown and cooked through.
  6. Meanwhile, melt butter in a skillet over medium heat. Add garlic and heavy cream; stir until combined.
  7. Gradually whisk in Parmesan cheese until melted and smooth; add spinach until wilted.
  8. Serve meatballs drizzled with the spinach Alfredo sauce.
