  • 2 large baking potatoes (Russets or Yukon Golds)
  • 200g block of feta cheese (or almond-based vegan feta)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 0.5 teaspoon red chili flakes
  • 1 head of garlic
  • 1 lemon (halved)
  • 1 tablespoon honey
  • 1/4 cup fresh basil

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Wash and cube the potatoes into bite-sized pieces. Par-boil them in salted water for about 6 minutes, then drain.
  3. Toss the par-boiled potatoes in olive oil, thyme, oregano, salt, pepper, and chili flakes until evenly coated.
  4. Spread the seasoned potatoes in a baking dish with the garlic wrapped in foil.
  5. Roast for 30 minutes until golden brown, stirring halfway through.
  6. Nestle the feta cheese in the center of the potatoes, squeeze half a lemon over it, and return to the oven for another 15 minutes.
  7. Remove from the oven; squeeze roasted garlic out of its skin and mash it into a paste.
  8. Mix mashed garlic back into the dish along with lemon juice from the remaining half and drizzle honey over everything.
  9. Garnish with fresh basil before serving.
