Ingredients

Scale
  • 2/3 cup whole milk (warmed)
  • 5 tablespoons granulated sugar (divided)
  • 2 teaspoons active dry yeast
  • 2 large eggs (room temperature)
  • 2¾ cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 cup unsalted butter (softened)
  • 1 box (3.4 ounces) instant vanilla pudding
  • 2 cups cold milk (for pudding)
  • 3 medium bananas (diced)
  • 1/3 cup light brown sugar
  • 10 vanilla wafers (crushed)
  • For glaze: 1 ounce cream cheese (softened)
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • Milk as needed for consistency

Instructions

  1. 1. Activate Yeast: Warm the milk until comfortable. Combine with active dry yeast and one tablespoon of granulated sugar; let sit for five minutes until bubbly.
  2. 2. Mix Dry Ingredients: In another bowl, whisk together flour, remaining sugar, salt, and instant vanilla pudding mix.
  3. 3. Combine Mixtures: Add eggs and melted butter to the yeast mixture. Whisk well, then combine with the dry ingredients until a shaggy dough forms.
  4. 4. Knead Dough: Transfer to a floured surface and knead for about 8 minutes until smooth and elastic. Place in a greased bowl and cover; allow to rise in a warm place for about an hour or until doubled.
  5. 5. Prepare Filling: Combine diced bananas and brown sugar; let sit for five minutes. Prepare instant pudding according to package directions.
  6. 6. Roll Out Dough: Roll the risen dough into a rectangle about 12×18 inches. Spread melted butter over it, then layer with pudding mixture, banana filling, and crushed vanilla wafers.
  7. 7. Form Rolls: Tightly roll the dough into a log; slice into approximately 12 even pieces. Place in a greased baking dish and cover to rise again for about 30-45 minutes.
  8. 8. Bake: Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown.
  9. 9. Glaze: Mix cream cheese, confectioners’ sugar, vanilla extract, and milk until smooth. Drizzle over warm rolls before serving.
