  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (6 oz) tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 oz egg noodles
  • 1 cup sour cream (or plain Greek yogurt)
  • 2 cups shredded cheddar cheese
  • 1 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In a large skillet over medium-high heat, brown the ground beef for about 7–10 minutes until crumbly. Drain excess fat.
  3. Stir in diced tomatoes, diced tomatoes with green chiles, tomato paste, garlic powder, onion powder, salt, and pepper. Simmer for 15–20 minutes.
  4. Cook egg noodles according to package instructions until al dente; drain and mix with sour cream or Greek yogurt.
  5. Spread the creamy noodles in the baking dish and layer the beef mixture on top.
  6. Sprinkle cheddar, parmesan, and mozzarella cheeses evenly over the casserole.
