  • 1/2 cup grated parmesan cheese or cojita cheese
  • 1/3 cup melted butter or plant-based butter
  • 1/3 cup mayonnaise or vegan mayonnaise
  • 1 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground black pepper

Instructions

  1. Preheat your Blackstone griddle to medium-high heat (375°F – 425°F).
  2. In a large bowl, combine grated cheese, melted butter, mayonnaise, chili powder, sea salt, and black pepper until well mixed.
  3. Wrap each ear of corn in aluminum foil after generously coating it with the mixture.
  4. Place the foil-wrapped corn on the preheated griddle and cook for 13 to 17 minutes, flipping every five minutes.
  5. Check for doneness by unwrapping one ear; it should be tender but not mushy.
