  • 1 can (15 oz) chickpeas
  • 4 cups fresh spinach (or kale)
  • 1 cup dried cranberries
  • 1 cup walnuts (or pecans)
  • 1/2 cup red onion (or green onions)
  • 1/4 cup fresh orange juice (or lemon juice)
  • 1/4 cup olive oil (or avocado oil)
  • 1 tbsp honey or maple syrup
  • 1 tbsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Rinse and drain the canned chickpeas thoroughly.
  2. Wash the spinach (or kale) leaves under cool water and pat dry.
  3. Finely chop the red onion and coarsely chop the walnuts.
  4. In a large mixing bowl, combine chopped greens, chickpeas, cranberries, walnuts, and red onion.
  5. In a separate bowl, whisk together orange juice, olive oil, honey or maple syrup, Dijon mustard, salt, and pepper until emulsified.
  6. Drizzle the dressing over the salad mixture and gently toss to combine.
  7. Let the salad rest for about 10-15 minutes before serving to enhance flavors.
