  • 34 crowns fresh broccoli (cooked and drained)
  • 1 cup real mayonnaise
  • 10.5 oz can of cream of chicken soup
  • 4 tablespoons butter (melted)
  • 1/4 cup diced white onion
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 11/2 cups shredded sharp cheddar cheese
  • 1 sleeve Ritz crackers (crushed)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9 x 13 inch baking pan with cooking spray.
  2. Cut broccoli into bite-sized pieces and steam or boil until just tender (about 5 minutes), then drain.
  3. In a mixing bowl, combine melted butter, mayonnaise, cream of chicken soup, and diced onion until smooth.
  4. Add the eggs and whisk until fully incorporated. Stir in salt, pepper, and one cup of shredded cheddar cheese.
  5. Spread the cooked broccoli evenly across the bottom of the baking dish and pour the cheese mixture over it.
  6. Sprinkle remaining cheddar cheese on top followed by crushed Ritz crackers.
  7. Bake for 30-40 minutes until golden brown and bubbly.
